FUDGESICLES


It was a nice hot summer day in Oakland, CA when little Miss Baker Collison had a brilliant idea. What was her idea you ask? Her idea was to do something other than sitting on the computer, her idea was to make fudgesicles. So when her mother got home she had a list all ready to go to the store to get the makings for her fudgesicles. When they returned from Safeway little Miss Baker Collison whipped up the fudgesicles and 4.5 hours later they were ready to try. Her and her family had a difficult time getting them out of the molds until they came up with the brilliant idea of running them under hot water and they were out in a second! Everyone instantly fell in love with them and they were gobbled down in seconds!

I got the recipe online and it was kind of hard to find because most just say to use packaged pudding so heres the recipe



Chocolate-Chocolate Fudge

makes 6 - 8 popsicles, depending on your mold

  • 4 ounces semisweet chocolate, finely chopped
  • 2 ounces bittersweet chocolate, finely chopped
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1/4 cup granulated sugar
  • 3 tablespoons cocoa powder
  • pinch salt
  • 2 tsp vanilla extract
  • 1/4 cup cocoa nibs


Procedure

  1. Place chopped chocolates into a medium-sized mixing bowl.
  2. Heat heavy cream, milk, sugar, cocoa powder and salt in a medium saucepan over medium heat. Whisk until cocoa is dissolved and mixture comes to a simmer. Remove from the heat and pour over the chocolate. Let stand for 1 minute, then whisk gently from the center until all chocolate is melted.
  3. Add in the vanilla extract.
  4. Allow to cool slightly, then divide the mixture evenly among the molds.
  5. Freeze for at least four hours or until solid.

finally the lemon bar recipe

Sorry I forgot about putting this recipe up a while ago, but here it is. Also don't hesitate to email me: heykitcat@yahoo.com if you want a recipe for some reason this doesn't let me know if people comment on my posts and I forget to check. ANYWAY heres the recipe I got from Meme for lemon bars:
CRUST
2 cups of flour
1/2 cup of powdered sugar
1 cup of butter softened
line a baking dish with foil
line the dish with the crust leaving about an inch of foil hanging over the sides
bake crust for 25 minutes at 350 degrees
FILLING
4 wisked eggs
1 1/2 white sugar (make sure you put the white sugar in the filling not the powdered sugar and vis versa)
1 table spoon of lemon peel
1/3 cup of lemon juice
1/4 cup of flour
pour onto crust and bake for 20 minutes
cut and sprinkle powdered sugar on top!
I think they turn out the best with fresh meyer lemons :)

pound cake!


When I was in Texas me and my Grandma also made a pound cake. Oh my god was it good. I loved it and it was easy as pie to make. It has loads of butter and sugar in it but hey thats what makes it good right? We made it for our little family brunch and I'm pretty sure everyone liked it...espically Luke who had two pieces. But I'm not really one to talk I had two also. I highly recommend making pound cake because like Grandma said you can do so much stuff with it. It can be anything from strawberry short cake to cake with nutella on it. So go make yourself a pound cake, let me tell you you wont be bored of eating it.

PASTA



Okay so I know this isn't really baking but I need to put it in my blog anyway. When I was in Texas me and my Grandma made pasta. I had never done it before but I'm so glad I did, it was DELICIOUS. The only ingredients in pasta are flour, and eggs, I was very surprised. The pasta was pretty labor intensive cranking it through the maker but it was well worth it. I kind of felt like an old italian woman...but its all good! Who knows maybe one day I'll have my own pasta shop instead of bakery?

chocolate chocolate chip cookies



So I'm kind of falling behind with this blog, but owell I'm updating it now! ANYWAY the other day my friend Shea came over and we decided we wanted to bake something, I didn't really have the patience to bake a cake and I didn't really want to have to eat all of it in 2 days (before going to Texas) so we made cookies. The cookies were chocolate chocolate chip cookies, they turned out pretty good a little over cooked. It was hard to tell if they were completely cooked or not so thats why they were a little hard. I got the recipe from 500 cookies cookbook. That cookbook has some good recipes but some are a little strange. Even though they were over cooked a tad they were still a hit between the Collison-Silverman and Wales family :)

meme's birthday cupcakes!


Its officially summer twenty ten and has been for a while but anyway Meme came to visit about two weeks ago. She left a few days before her birthday but that was no excuse not to make her cupcakes. So what did I do? I whipped up some vanilla cupcakes with cream cheese frosting, usually I make chocolate cupcakes but these vanilla ones were delicious. The cream cheese frosting was SUPERB it wasn't too sweet or anything, it was my favorite part of the cupcakes for sure. Now you are probably wondering where I got this recipe, it is from the Magnolia Bakery cook book, I highly recommend this cook book it is my favorite. All the cupcakes always come out delicious and everyone who eats them loves them.

chocolate chip cookies :)


In between studying for finals I decided to make chocolate chip cookies to take a break and a de-stresser. I haven't been baking that much lately, but that will change soon because its SUMMER TIME now, which means I have more time to bake and less time/no time dedicated to homework. ANYWAY I made chocolate chip cookies I use the recipe on the back of the ghiradelli bag, I think that recipe makes the best cookies. Every time I make them they come out differently, sometimes they are more cake like and other times they are harder, I think it has to do with how soft the butter is, if it is melted or softened or a little bit of both. Anyway there's a picture of them my mom took the picture because she said the ones that I take are boring and they should be around chocolate or arranged in a certain way.

lemon bars


Before mother's day, my mom's friend gave us lemons from his lemon tree. We got at least a dozen and my mom suggested we should make lemon bars with them. So on mother's day my mom and I (mostly my mom I have to admit) made lemon bars. We got the recipe from my Meme. They are delicious and the lemons are SUPERB. I love lemons but don't usually like lemon bars but these are #1.

chocolate cupcakes


For my Grandma's birthday, I made chocolate cupcakes with chocolate buttercream frosting. The recipe was from The Magnolia Bakery Cookbook. So far that is my favorite cookbook for desserts. They are always nice and moist and the frosting was nice and creamy :)

oatmeal chocolate chip cookies

Tonight I made oatmeal chocolate chip cookies :) it was either that or snickerdoodles. Most people have only had oatmeal raisin cookies, but I prefer oatmeal chocolate chip. I used the recipe on the lid of the Quaker Oats container with my touch to make the perfect cookie with the perfect ratio of oatmeal to chocolate chips!

So I'm not sure what to put here, But I'll start by saying I'm not much a writer if I was this would probably have a different name. I really like to bake stuff, because its fun, delicious and always makes people happy. Every time I bake something I will post pictures of it on here and write a little description. Enjoy!
